  • 34 tbsp ice water

For the Filling:

  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 lb (450 g) mixed wild mushrooms (shiitake, oyster, cremini, chanterelles, or porcini)
  • 1 tsp thyme leaves
  • 1/2 tsp rosemary
  • Salt and pepper, to taste
  • 1/2 cup (120 ml) heavy cream or crème fraîche
  • 2 large eggs
  • 1/2 cup (50 g) grated parmesan or gruyère cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Make the Pastry: Mix flour and salt. Cut in chilled butter until crumbly. Add ice water gradually until dough forms. Shape into a disc, wrap, and refrigerate 30 minutes.
  2. Prepare the Filling: Heat oil or butter in a skillet. Sauté onion until translucent, then add garlic. Stir in mushrooms and herbs, cooking until golden and moisture evaporates. Season with salt and pepper. Let cool slightly.
  3. Assemble the Tart: Preheat oven to 375°F (190°C). Roll out pastry and press into a 9-inch tart pan. In a bowl, whisk cream and eggs. Stir in mushroom mixture and cheese. Pour into crust.
  4. Bake: Bake 30–35 minutes, until crust is golden and filling is set. Garnish with parsley before serving.
