Instructions

Step 1: Sauté Aromatics Heat olive oil in a large pot. Add chopped onion and cook until soft, about 5 minutes. Stir in garlic, Italian seasoning, salt, and pepper. Step 2: Add Broth and Chicken Pour in the chicken broth and add the shredded chicken. Bring to a simmer. Step 3: Cook the Noodles Add broken lasagna noodles directly into the pot. Simmer until noodles are tender, about 10–12 minutes. Step 4: Add Dairy and Cheeses Reduce heat to low. Stir in the milk, cottage cheese, mozzarella, and parmesan. Simmer gently until melted and creamy. Add cornstarch slurry if thicker texture is desired. Step 5: Serve Taste and adjust seasoning. Ladle soup into bowls and top with fresh chopped parsley.

Notes

Use rotisserie chicken for ease and extra flavor. Cottage cheese offers a lighter, high-protein alternative to ricotta. Avoid overcooking noodles to prevent sogginess. Add baby spinach or mushrooms for extra veggies. For slow cooker: add dairy in the final 15 minutes of cooking.
