Ingredients
- 3 cups seedless watermelon, cut into 1-inch cubes
- 6 ounces feta cheese, cut into 1-inch cubes
- Fresh mint leaves (1 per skewer)
- 1–2 tablespoons olive oil (optional, for drizzling)
- Salt and freshly ground pepper (optional, to taste)
- 12–16 small skewers or long toothpicks
Instructions
1. Prepare ingredients
Cut the watermelon into uniform 1-inch cubes. Pat lightly with a paper towel to remove excess moisture. Cut the feta into similar-sized cubes. Rinse and pat dry the mint leaves.
2. Assemble the skewers
Take one small skewer or toothpick. First thread a cube of watermelon, then a folded mint leaf, followed by a cube of feta cheese. Repeat with remaining ingredients.
3. Arrange on a platter
Place assembled skewers on a serving platter. Space them slightly for easy grabbing.
4. Optional finishing touch
Drizzle lightly with olive oil and add a pinch of sea salt and freshly ground black pepper, if desired, for extra flavor.
5. Serve chilled
Keep refrigerated until ready to serve. These are best served within a few hours of assembling.
