If you’re tired of rushed mornings and boring breakfasts, these Breakfast Rolls are about to become your new favorite morning hack.
Ingredients
For the dough (if making from scratch):
- 3 cups all-purpose flour
- 1 packet (2¼ tsp) instant yeast
- 1 cup warm milk
- 2 tbsp sugar
- 1 tsp salt
- 2 tbsp melted butter
Or use: 1 pound store-bought pizza or crescent roll dough
For the filling:
- 6 large eggs, scrambled
- 1 cup cooked sausage, bacon, or ham (chopped)
- 1½ cups shredded cheddar or Colby-Jack cheese
- ½ cup chopped green onions (optional)
- Salt and pepper to taste
- 1 tbsp butter (for brushing the tops)
Instructions
Step 1: Prepare the Dough (if homemade)
In a bowl, combine warm milk, sugar, and yeast. Let sit for 5 minutes. Add flour, salt, and melted butter. Mix and knead until smooth. Let rise for 1 hour.
Step 2: Cook the Filling
Scramble the eggs in a skillet. Season with salt and pepper. Stir in cooked sausage or bacon, green onions, and cheese. Set aside to cool.
Step 3: Roll Out and Fill
Roll dough into a large rectangle. Cut into 8–10 squares. Add a spoonful of filling to each and fold edges over to form rolls. Seal seams underneath.
Step 4: Bake
Place rolls on a baking sheet lined with parchment. Brush with butter. Bake at 375°F for 18–22 minutes, until golden brown.
Step 5: Serve or Store
Let cool slightly before serving—or cool completely to store for later.
You can also make mini versions for breakfast party finger foods or brunch trays.
Notes
- Refrigerator: Store unbaked rolls overnight, then bake fresh in the morning
- Freezer: Freeze baked or unbaked rolls in airtight containers
