Ingredients
For the Salad:
- 5 oz baby arugula or spring mix (about 5 cups)
- 2 ripe peaches, thinly sliced
- ¾ cup fresh blueberries
- ½ cup crumbled feta cheese
- ¼ cup thinly sliced red onion
- ¼ cup chopped pecans or walnuts (optional)
For the Lemon Basil Vinaigrette:
- ¼ cup olive oil
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tsp Dijon mustard
- 1 tsp honey or maple syrup
- 2 tbsp chopped fresh basil
- Salt and pepper, to taste
Instructions
Step 1: Make the Lemon Basil Vinaigrette
In a small bowl or jar, combine olive oil, lemon juice, lemon zest, Dijon mustard, honey, and chopped basil. Add a pinch of salt and pepper. Whisk or shake until emulsified. Set aside to let the flavors meld.
Step 2: Prep Your Ingredients
Wash and dry the greens. Slice the peaches thinly, crumble the feta (if not pre-crumbled), thinly slice the onion, and chop the nuts if using.
Step 3: Assemble the Salad
In a large salad bowl, layer the greens, then top with sliced peaches, blueberries, red onion, crumbled feta, and nuts.
Step 4: Dress and Toss
Drizzle the lemon basil vinaigrette over the top just before serving. Gently toss to coat all ingredients evenly.
Step 5: Serve Immediately
Plate and enjoy your fresh, vibrant blueberry peach and feta salad!
Notes
- Use ripe but firm fruit to avoid mushy texture.
- Crumble the feta yourself from a block for a creamier consistency.
- Toast the nuts lightly in a skillet for extra flavor.
- Chill your salad bowl before assembling for an extra-refreshing dish.
