  • ¼ cup thinly sliced red onion
  • ¼ cup chopped pecans or walnuts (optional)

For the Lemon Basil Vinaigrette:

  • ¼ cup olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • 2 tbsp chopped fresh basil
  • Salt and pepper, to taste

Instructions

Step 1: Make the Lemon Basil Vinaigrette
In a small bowl or jar, combine olive oil, lemon juice, lemon zest, Dijon mustard, honey, and chopped basil. Add a pinch of salt and pepper. Whisk or shake until emulsified. Set aside to let the flavors meld.

Step 2: Prep Your Ingredients
Wash and dry the greens. Slice the peaches thinly, crumble the feta (if not pre-crumbled), thinly slice the onion, and chop the nuts if using.

Step 3: Assemble the Salad
In a large salad bowl, layer the greens, then top with sliced peaches, blueberries, red onion, crumbled feta, and nuts.

Step 4: Dress and Toss
Drizzle the lemon basil vinaigrette over the top just before serving. Gently toss to coat all ingredients evenly.
