  • 1/4 cup plain Greek yogurt (60g)
  • 1/3 cup coconut oil, melted (75ml)
  • 1 1/2 cups whole wheat flour (180g)
  • 1/2 cup unsweetened cocoa powder (50g)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips (optional)

Instructions

  1. Preheat oven: Preheat to 350°F (175°C). Line or grease a 12-cup muffin tin.
  2. Blend veggies: Blend banana, applesauce, spinach, and eggs until completely smooth.
  3. Mix wet ingredients: Transfer mixture to a bowl. Whisk in zucchini, vanilla, yogurt, honey, and melted coconut oil.
  4. Combine dry ingredients: In a separate bowl, whisk flour, cocoa powder, baking powder, baking soda, cinnamon, and salt.
  5. Make batter: Gently fold dry ingredients into wet mixture until just combined.
  6. Add chocolate chips: Stir in chocolate chips if using.
  7. Bake: Divide batter evenly and bake 20–25 minutes until a toothpick comes out clean.
  8. Cool: Cool 5 minutes in the pan, then transfer to a rack.
