This Vegan Thanksgiving Pot Pie is hearty, festive, and full of flavor. With a rich vegetable filling, creamy dairy-free gravy, and a flaky golden crust, it’s the perfect plant-based centerpiece for the holidays.

			- 2 tbsp olive oil or vegan butter
- 1 yellow onion, chopped
- 3 cloves garlic, minced
- 3 carrots, peeled and diced
- 2 ribs celery, diced
- 1 cup frozen green peas
- 2 cups diced potatoes (Yukon Gold or russet)
- 2 cups vegetable broth
- ½ cup unsweetened plant-based milk (almond or oat)
- ⅓ cup all-purpose flour (or gluten-free blend)
- 1 tsp dried thyme
- ½ tsp sage
- Salt and pepper, to taste
- 1 sheet vegan puff pastry or pie crust
Optional Add-Ins:
- Cubed tofu “turkey” or baked tofu
- Mushrooms for earthy flavor
- Fresh herbs like rosemary or parsley
Instructions
- Prepare filling: Heat oil in a skillet over medium heat. Sauté onions and garlic for 3–4 minutes until soft.
- Add vegetables: Stir in carrots, celery, potatoes, salt, and pepper. Cook 10 minutes, stirring occasionally.
- Make gravy base: Sprinkle flour over veggies and stir to coat. Cook 1–2 minutes. Gradually add broth and plant milk, stirring to form a smooth sauce.
- Season: Add thyme, sage, and other herbs. Simmer 10–12 minutes until thickened and potatoes are tender. Stir in peas.
- Preheat oven: Set oven to 425°F (220°C).
- Assemble pie: Transfer filling to a greased pie dish. Place crust over filling, seal edges, cut slits, and brush with plant milk.
- Bake: Bake 25–30 minutes until crust is golden brown and flaky.
- Cool & serve: Let sit 10 minutes before serving for cleaner slices.
Notes
- Don’t overcook filling; veggies finish in the oven.
- Use quality vegan puff pastry or pie crust for best results.
- Add baked tofu, seitan, or lentils for extra protein.
- Make filling ahead and assemble before baking.
