Ingredients

  • 2 cups boiled and mashed potatoes (about 3 medium-sized potatoes)
  • ½ cup finely chopped onion
  • ¼ cup chopped coriander leaves
  • 2 green chilies, finely chopped
  • 1 teaspoon grated ginger
  • ½ teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • ½ teaspoon garam masala
  • Salt to taste
  • 2 tablespoons chickpea flour (or oat flour)
  • 1 tablespoon lemon juice
  • 2 teaspoons oil (for brushing)
  • Optional: ½ cup cooked green peas

Instructions

  1. Boil the potatoes until tender, then peel and mash while still warm.
  2. In a large bowl, mix mashed potatoes, onions, green chilies, coriander leaves, and ginger.
  3. Add turmeric, cumin, coriander powder, garam masala, lemon juice, and salt. Mix well.
  4. Add chickpea flour to bind the mixture. Adjust with more flour if it feels sticky.
  5. Divide into equal portions, shape into balls, and flatten into patties.
  6. Preheat oven to 400°F (200°C) and line a tray with parchment paper.
  7. Brush the tray lightly with oil, place patties on the tray, and brush tops with a little oil.
  8. Bake for 15 minutes, flip, and bake another 10–15 minutes until golden and crisp.
  9. Serve hot with chutney or dairy-free yogurt.
