  • 8 oz squid ink pasta (spaghetti or linguine)
  • 1 lb large shrimp, peeled and deveined
  • 4 tablespoons butter
  • 3 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Juice of 1/2 lemon
  • Chopped parsley or basil, for garnish

Instructions

  1. Cook the pasta: Bring a pot of salted water to boil. Cook squid ink pasta until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Sauté the shrimp: Pat shrimp dry. Heat 2 tbsp olive oil in a skillet, season shrimp with salt and pepper, and cook 2–3 minutes per side until pink. Remove and set aside.
  3. Make the garlic butter sauce: In the same pan, add remaining olive oil and butter. Stir in garlic and red pepper flakes, cooking 1 minute until fragrant.
  4. Toss pasta: Add drained pasta to the pan, tossing with garlic butter. Add pasta water as needed. Squeeze lemon juice over the pasta.
  5. Finish: Return shrimp to the skillet, toss to combine, and adjust seasoning. Serve hot topped with parsley or basil.

Notes

  • Use fresh shrimp for best results, or thaw and dry frozen shrimp well.
  • Don’t overcook garlic—it can turn bitter quickly.
  • Reserve pasta water for a silky sauce.
  • For spooky flair, drizzle marinara “blood” over the pasta before serving.
