  • 2 bagels (plain, everything, or your favorite variety)
  • 6 oz (170g) cooked steak, thinly sliced or chopped (ribeye, sirloin, or leftover steak work great)
  • 2 large eggs
  • 2 slices cheddar cheese (or provolone, Swiss, or American)
  • 1 tbsp butter
  • Salt and pepper, to taste
  • Optional toppings: sautéed onions, spinach, arugula, avocado, or hot sauce

Instructions

Step 1: Prepare the Steak

If you’re using leftover steak, slice it thin against the grain. If you’re starting from raw steak, season it with salt and pepper, then sear in a hot skillet with a little oil for 2–3 minutes per side (depending on thickness). Let rest, then slice or chop.

Warm up your pre-cooked or sliced steak in the skillet just before assembling the sandwich.

Step 2: Cook the Eggs

Crack eggs into a bowl, beat with a fork, and season with salt and pepper. Melt ½ tbsp butter in the skillet over medium heat. Pour in the eggs and scramble gently or cook as a flat omelet—whichever style you prefer for your sandwich.

Remove from heat and set aside.

Step 3: Toast the Bagels

Slice your bagels in half and toast them until golden brown. This is key for structure and crunch—don’t skip this step!

If desired, spread a little butter or your favorite spread on each toasted half.

Step 4: Assemble the Sandwich

Layer scrambled eggs on the bottom bagel half, then pile on the warm steak slices. Top with a slice of cheese and optional extras like sautéed onions or greens. Place the top bagel half on and press down gently.

Step 5: Melt the Cheese

To fully melt the cheese, return the sandwich to a warm skillet with a lid for 1–2 minutes or pop it in the toaster oven for a few minutes until everything is warm and gooey.

Slice in half and serve hot!
