If you’ve ever dreamed of combining the comfort of a grilled cheese sandwich with the satisfaction of a classic bacon and egg breakfast, this BACON AND EGG BREAKFAST GRILLED CHEESE is the morning miracle you didn’t know you needed.
2 slices of sandwich bread (white, sourdough, or your favorite)
2 large eggs
2 slices of bacon
½ tablespoon butter (plus more for grilling)
¼ cup shredded cheddar cheese or 2 slices
Salt and pepper to taste
Optional add-ons:
Sliced tomatoes
Avocado
Spinach or arugula
A dash of hot sauce
Thinly sliced onions
Alternative cheeses like pepper jack, Swiss, or mozzarella
Step 1: Cook the bacon
In a skillet over medium heat, cook the bacon until crispy, about 5–7 minutes. Transfer to a paper towel-lined plate and set aside. Remove excess bacon grease from the pan, leaving a bit for flavor if desired.
Step 2: Scramble the eggs
Crack the eggs into a bowl, add a pinch of salt and pepper, and whisk until smooth. Melt half a tablespoon of butter in the pan and pour in the eggs. Stir gently over low heat until the eggs are just set—soft, fluffy, and still a little creamy.
Step 3: Assemble the sandwich
Butter one side of each slice of bread. On the unbuttered side of one slice, layer half the cheese, scrambled eggs, crispy bacon, and the rest of the cheese. Top with the second slice, buttered side facing out.
Step 4: Grill the sandwich
Place the sandwich in a clean skillet over medium-low heat. Cook for 2–3 minutes per side, pressing down lightly, until the bread is golden brown and the cheese is melted.
Step 5: Slice and serve
Remove from the skillet, let rest for 1 minute, then slice in half. Serve warm and melty.
Use low heat to prevent the bread from browning too quickly while the cheese melts
Cook the bacon first to free up your skillet and infuse flavor into the pan
Don’t overcook the eggs—they’ll continue to cook slightly in the sandwich
