    • 2 tablespoons heavy cream

  • 1 1/2 cups (250g) semi-sweet or milk chocolate chips
  • 1 teaspoon coconut oil or vegetable shortening
  • Flaky sea salt (optional, for garnish)

Instructions

  1. Preheat and Prepare: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Make the Dough: Cream butter and sugar until light and fluffy. Add egg and vanilla, then mix until combined.
  3. Combine Dry Ingredients: In another bowl, whisk flour, baking powder, and salt. Gradually add to wet mixture until dough forms.
  4. Roll and Cut: Roll dough to 1/4-inch thickness on a floured surface. Cut into rounds using a 2-inch cookie cutter and place on the baking sheet.
  5. Bake: Bake 9–11 minutes or until edges are lightly golden. Let cool completely before adding caramel.
  6. Make Caramel: Melt caramels with cream in a saucepan over low heat until smooth. Spoon a teaspoon onto each cooled cookie and let set.
  7. Add Chocolate: Melt chocolate chips with coconut oil in the microwave in 20-second intervals until smooth. Spread over caramel layer.
  8. Chill and Serve: Let set at room temperature or refrigerate briefly. Sprinkle sea salt before serving, if desired.
