Description

This **Turkey Sweet Potato Chili** is a cozy, healthy fall dinner packed with lean protein, fiber, and seasonal veggies. Featuring ground turkey, hearty sweet potatoes, carrots, and warming spices, this one-pot meal is perfect for weeknights, meal prep, or lazy fall weekends. Naturally gluten-free, customizable with or without beans, and freezer-friendly, it’s the ultimate easy healthy fall recipe.

Ingredients

Scale
  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 2 carrots, diced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 3 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 3 cups chicken or vegetable broth
  • 1 can beans (optional: black beans or kidney beans, drained and rinsed)
  • 2 tbsp olive oil
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Optional toppings: avocado, shredded cheese, cilantro, Greek yogurt, tortilla chips

Instructions

  1. Cook aromatics & turkey: Heat oil in a large pot. Add onion and carrots, sauté until soft. Stir in garlic, then add ground turkey, cooking until browned.
  2. Add veggies & spices: Stir in bell pepper, sweet potatoes, chili powder, cumin, paprika, salt, and pepper. Cook for 2–3 minutes to release flavors.
  3. Simmer: Add diced tomatoes and broth. Return turkey to pot (if removed) and bring to a boil. Reduce heat, cover, and simmer for 30–35 minutes, until sweet potatoes are tender.
  4. Optional beans: Stir in beans during the last 10 minutes of cooking.
  5. Finish & serve: Adjust seasonings, add lime juice or cilantro if desired. Serve hot with toppings of choice.

Notes

  • Use fire-roasted tomatoes for a smoky flavor boost.
  • Don’t overcook sweet potatoes—they should be fork-tender, not mushy.
  • Skip beans for a lighter, paleo-style chili.
  • This chili freezes well for up to 3 months; reheat with a splash of broth.
  • For slow cooker version: brown turkey and onion first, then transfer all ingredients to crock pot. Cook LOW 6–7 hours or HIGH 3–4 hours.
