Ingredients
Scale
- 1 tbsp olive oil
- 1 medium yellow onion, finely chopped
- 2 tsp minced garlic (about 2 cloves)
- 1/3 cup milk
- 1 tbsp Worcestershire sauce
- 1/3 cup ketchup
- 1 1/2 tsp salt
- 1/2 tsp freshly ground black pepper
- 2 large eggs, beaten
- 1/3 cup finely chopped fresh parsley
- 3/4 cup plain breadcrumbs
- 2 lbs ground turkey (93% lean)
For the Glaze:
- 1/3 cup ketchup
- 1 tbsp brown sugar
- 1 tbsp balsamic vinegar
Instructions
- Preheat: Set oven to 350°F (175°C) and place rack in middle position.
- Sauté aromatics: Heat olive oil in skillet. Cook onion 5–7 minutes until soft. Add garlic and cook 30 seconds more. Cool slightly.
- Mix base: In a bowl, whisk milk, Worcestershire sauce, ketchup, salt, pepper, eggs, and parsley. Stir in breadcrumbs. Add turkey and onion mixture. Mix gently until just combined.
- Shape loaf: Transfer mixture into a 9×5-inch loaf pan or shape on a foil-lined sheet. Smooth top.
- Prepare glaze: Mix ketchup, brown sugar, and balsamic vinegar. Spread evenly over loaf.
- Bake: Bake 55–60 minutes, or until internal temp reaches 165°F (74°C).
- Rest & serve: Let loaf rest 5–10 minutes before slicing to keep juices in.
Notes
- Use 93% lean ground turkey for best moisture and flavor.
- Avoid overmixing — it makes the loaf dense.
- Always let the meatloaf rest before slicing to lock in juices.
- For gluten-free, swap breadcrumbs with gluten-free oats or panko.
- Customize glaze with BBQ sauce, tomato paste, or maple-Dijon for variety.
