Description

This Turkey Meatloaf Recipe is unbelievably moist, tender, and full of flavor. Made with lean ground turkey, sautéed onions, breadcrumbs, eggs, and a sweet-tangy glaze, it’s a healthier take on a classic comfort dish. Perfect for weeknight dinners, meal prep, or Sunday suppers, this recipe ensures juicy slices every time without the dryness that turkey meatloaf is known for.

Ingredients

Scale
  • 1 tbsp olive oil
  • 1 medium yellow onion, finely chopped
  • 2 tsp minced garlic (about 2 cloves)
  • 1/3 cup milk
  • 1 tbsp Worcestershire sauce
  • 1/3 cup ketchup
  • 1 1/2 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 2 large eggs, beaten
  • 1/3 cup finely chopped fresh parsley
  • 3/4 cup plain breadcrumbs
  • 2 lbs ground turkey (93% lean)

For the Glaze:

  • 1/3 cup ketchup
  • 1 tbsp brown sugar
  • 1 tbsp balsamic vinegar

Instructions

  1. Preheat: Set oven to 350°F (175°C) and place rack in middle position.
  2. Sauté aromatics: Heat olive oil in skillet. Cook onion 5–7 minutes until soft. Add garlic and cook 30 seconds more. Cool slightly.
  3. Mix base: In a bowl, whisk milk, Worcestershire sauce, ketchup, salt, pepper, eggs, and parsley. Stir in breadcrumbs. Add turkey and onion mixture. Mix gently until just combined.
  4. Shape loaf: Transfer mixture into a 9×5-inch loaf pan or shape on a foil-lined sheet. Smooth top.
  5. Prepare glaze: Mix ketchup, brown sugar, and balsamic vinegar. Spread evenly over loaf.
  6. Bake: Bake 55–60 minutes, or until internal temp reaches 165°F (74°C).
  7. Rest & serve: Let loaf rest 5–10 minutes before slicing to keep juices in.

Notes

  • Use 93% lean ground turkey for best moisture and flavor.
  • Avoid overmixing — it makes the loaf dense.
  • Always let the meatloaf rest before slicing to lock in juices.
  • For gluten-free, swap breadcrumbs with gluten-free oats or panko.
  • Customize glaze with BBQ sauce, tomato paste, or maple-Dijon for variety.
