Ingredients

Scale
  • 4045 buttery round crackers or rectangular butter crackers
  • 1 cup (2 sticks) unsalted butter
  • 1 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 1/2 cups semisweet chocolate chips
  • 1/2 cup creamy peanut butter
  • Optional toppings: chopped pecans, sprinkles, sea salt

Instructions

  1. Prepare the Base: Line a 9×13-inch baking dish with parchment paper. Arrange crackers in a single even layer.
  2. Make the Toffee: Melt butter in a saucepan, stir in brown sugar, and bring to a gentle boil. Cook for 3 minutes. Remove from heat and stir in vanilla.
  3. Pour Toffee: Carefully pour the hot toffee over the cracker layer and spread evenly.
  4. Bake: Bake at 350°F (175°C) for 10 minutes until bubbling.
  5. Add Chocolate: Sprinkle chocolate chips over hot toffee, let melt for 3 minutes, then spread smooth.
  6. Add Peanut Butter Layer: Warm peanut butter until spreadable and swirl or spread over the chocolate layer.
  7. Chill: Cool 15–20 minutes, then refrigerate at least 2 hours.
  8. Cut and Serve: Lift from parchment and cut into bars or squares.

  • Use parchment paper for easy removal.
  • Avoid overstirring the toffee while boiling.
