Ingredients

- 1 cup coconut milk (chilled)
- 1/2 cup cream of coconut (like Coco Lopez)
- 1/4 cup fresh lime juice
- 2 tablespoons simple syrup (optional, to taste)
- 1 cup club soda (chilled)
- Ice cubes
Optional Garnishes:
- Lime wedges
- Fresh mint leaves
- Shredded coconut (to rim glasses)
Instructions
Step 1: Mix the Coconut Base
In a pitcher or large shaker, combine coconut milk, cream of coconut, lime juice, and simple syrup. Stir or shake until well mixed and smooth.
Step 2: Add Fizz
Gently stir in the club soda — don’t shake, or it’ll foam up!
Step 3: Serve Cold
Fill glasses with ice. Pour the coconut cooler mixture over the ice and garnish with lime wedges, mint, or a sugared rim of coconut for that extra tropical flair.
Notes
- Best served fresh – Coconut milk can separate if stored too long
- If prepping ahead, mix all ingredients except the soda and refrigerate for up to 24 hours. Add soda just before serving.
- Use full-fat coconut milk for the creamiest texture
