Ingredients
1 pound lean ground beef
2 tablespoons olive oil
1 yellow onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
2 cloves garlic, minced
3 cups potatoes, diced (Yukon gold or red work best)
1 teaspoon ground cumin
1 teaspoon chili powder
½ teaspoon paprika
½ teaspoon oregano
Salt and black pepper to taste
¼ cup water or beef broth
Fresh cilantro or parsley, for garnish
Optional: lime wedges, shredded cheese, or avocado slices
Instructions
- Heat the oil in a large skillet over medium heat. Add the diced potatoes and cook for 10–12 minutes, stirring occasionally, until they’re golden and starting to soften. Remove from the skillet and set aside.
- Add the ground beef to the same skillet. Cook for 4–5 minutes, breaking it up as it browns.
- Add onion and bell peppers. Sauté for 3–4 minutes until softened. Stir in the garlic and cook another minute until fragrant.
- Return the potatoes to the pan. Add cumin, chili powder, paprika, oregano, salt, and pepper. Pour in the water or broth and stir to coat everything evenly.
- Cover and reduce heat to low. Simmer for 8–10 minutes, or until the potatoes are tender and everything is heated through.
- Uncover and cook an additional 2–3 minutes to reduce any remaining liquid, if needed.
- Garnish and serve. Top with fresh herbs, cheese, avocado, or your favorite toppings.
Notes
Use a heavy-bottomed skillet to get a good sear on the beef and potatoes
Don’t overcrowd the pan—this can steam the vegetables instead of browning them
Dice potatoes uniformly for even cooking
Brown the beef before adding too many veggies to avoid boiling it
