Ingredients
2 tablespoons olive oil
1½ pounds boneless, skinless chicken breasts, thinly sliced
Salt and pepper, to taste
3 cloves garlic, minced
1 teaspoon Italian seasoning
1 cup heavy cream
½ cup chicken broth
1½ cups grated Asiago cheese
1 package (16 oz) potato gnocchi
2 cups baby spinach
¼ teaspoon red pepper flakes (optional)
Fresh basil or parsley for garnish
Instructions
- Sauté the chicken: Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper. Cook for 4–5 minutes per side, until browned and cooked through. Remove from the pan and set aside.
- Sauté garlic and seasonings: In the same skillet, add a bit more oil if needed. Add garlic and Italian seasoning. Sauté for 30 seconds until fragrant.
- Deglaze and build the sauce: Pour in the chicken broth and scrape up any brown bits from the bottom of the pan. Stir in heavy cream and bring to a simmer.
- Add gnocchi: Stir in the uncooked gnocchi. Let it simmer for 5–7 minutes, stirring occasionally, until the gnocchi are tender and the sauce thickens slightly.
- Stir in cheese: Lower heat and add Asiago cheese a handful at a time, stirring until melted and creamy.
- Add spinach and chicken: Toss in baby spinach and cooked chicken. Stir until spinach wilts and everything is well combined. Taste and adjust seasoning.
- Serve: Garnish with chopped basil or parsley and a sprinkle of extra Asiago, if desired.
Notes
Use refrigerated or shelf-stable gnocchi, but avoid overcooking—gnocchi should be tender but not mushy
Simmer, don’t boil, in the sauce to allow them to cook gently and absorb flavor
Stir gently to prevent sticking and preserve their pillowy texture
Don’t drain the gnocchi if cooking separately—transfer directly into the sauce to retain starch
Choose high-quality gnocchi made with real potatoes for best texture
