- 1/4 cup Parmesan cheese, grated (optional, for garnish)
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.
- Cook the shrimp: Heat olive oil in a large skillet over medium heat. Add shrimp and season with salt and pepper. Cook 2-3 minutes per side, or until pink and opaque. Remove shrimp from the skillet and set aside.
- Make the sauce: In the same skillet, add butter and garlic. Sauté garlic for 1 minute until fragrant. Add chicken broth, heavy cream, and Italian seasoning. Stir and bring to a simmer.
- Add tomatoes and spinach: Once the sauce is simmering, add diced tomatoes and spinach. Cook for 3-4 minutes, until spinach has wilted and sauce thickens slightly.
- Combine pasta and shrimp: Add cooked pasta to the skillet and toss to coat with the sauce. Add cooked shrimp and toss again until well combined. Add reserved pasta water if the sauce is too thick.
- Serve: Serve pasta in bowls, garnished with freshly grated Parmesan cheese, if desired.
