  • 2 tablespoons melted butter (plus more for brushing)

Instructions

  1. Make the Tomato Soup: Heat olive oil in a large pot over medium heat. Sauté onion until translucent, about 4–5 minutes. Add garlic and cook 1 more minute. Stir in tomato paste, then add crushed tomatoes, broth, basil, salt, and pepper. Simmer 15–20 minutes. Blend until smooth, stir in cream, and simmer 5 more minutes.
  2. Mix Dumpling Dough: In a bowl, whisk flour, baking powder, garlic powder, parsley, and salt. Fold in cheddar. Add milk and melted butter, stirring just until combined.
  3. Cook the Dumplings: Drop spoonfuls of dough onto the simmering soup. Cover and steam 12–15 minutes without lifting the lid.
  4. Finish and Serve: Brush dumplings with melted butter, garnish with parsley, and serve hot.
