Description
When you’re craving something bright, fresh, and packed with flavor, this Bruschetta Dip is the ultimate appetizer to reach for.
Ingredients
- 2 cups cherry or Roma tomatoes, finely chopped
- 1–2 cloves garlic, minced
- 1 tablespoon balsamic glaze or vinegar
- 2 tablespoons extra virgin olive oil
- Salt and black pepper, to taste
- ¼ cup fresh basil, chiffonade or finely chopped
- 1 cup whipped cream cheese or a mix of cream cheese and ricotta
- Optional toppings: shredded mozzarella, crumbled feta, or grated parmesan
Instructions
Step 1: Prep the Tomatoes
Chop your tomatoes into small, even pieces. Roma tomatoes are great for a firmer texture, while cherry tomatoes add extra sweetness.
Step 2: Mix the Flavor Base
In a bowl, combine chopped tomatoes, minced garlic, olive oil, balsamic glaze, salt, pepper, and fresh basil. Mix gently to avoid bruising the herbs.
Step 3: Prepare the Creamy Base
In a shallow bowl or dish, spread a layer of whipped cream cheese (or your cheese combo of choice) evenly across the bottom.
Step 4: Layer the Dip
Spoon the tomato mixture on top of the cheese layer. Garnish with extra basil, a drizzle of balsamic glaze, and optional cheese.
Step 5: Chill and Serve
Let the dip rest in the fridge for 15–30 minutes for the flavors to meld, or serve immediately with pita chips, toasted bread, or crackers.
