Description

This Thanksgiving Piecaken is the ultimate holiday dessert mashup – combining pumpkin pie, pecan pie, apple pie, and spice cake into one showstopping layered masterpiece. Frosted with cinnamon buttercream and decorated with seasonal flair, it’s the best ever Thanksgiving dessert to impress family and friends.

Ingredients

Scale
  • 2 spice cake layers (9-inch), homemade or box mix
  • 1 batch cinnamon or maple buttercream frosting
  • 1 pumpkin pie (9-inch, fully baked)
  • 1 pecan pie
  • 1 apple or cherry pie
  • Optional: sweet potato pie for variation
  • Optional frostings: caramel drizzle, cream cheese frosting, or whipped ganache
  • Extras: parchment paper, cake board, cake dowels or straws, offset spatula

Instructions

  1. Prepare layers: Bake and cool cake layers and pies completely. Chill in the fridge for 2 hours or overnight for sturdier stacking.
  2. Level: Trim cake domes and pie tops if needed to ensure even layers.
  3. Stack: Place a cake layer on the base, spread frosting, add a pie, more frosting, then alternate cake and pie until stacked.
  4. Crumb coat: Apply a thin frosting layer to lock in crumbs. Chill for 30 minutes.
  5. Final frost: Coat with a thick layer of buttercream. Smooth with an offset spatula and decorate with caramel drizzle, nuts, or festive toppings.
  6. Chill and serve: Refrigerate at least 1 hour before slicing. Clean the knife between slices for perfect presentation.

Notes

  • Always chill cakes and pies before stacking to avoid collapsing layers.
  • Use sturdy pies like pumpkin or pecan – avoid runny fillings.
  • Add cake dowels or straws for extra support if stacking tall layers.
  • Cinnamon buttercream is classic, but maple or cream cheese frosting also works well.
  • Decorate with crushed cookies, caramel drizzle, or piped swirls for a festive finish.
