  • 1 tablespoon rice vinegar
  • 1 tablespoon fresh lime juice
  • 1 teaspoon sriracha (optional for heat)
  • 1 teaspoon grated fresh ginger
  • 1 garlic clove, minced
  • 23 tablespoons warm water (to thin sauce)
  • 4 large flour tortillas (or preferred wraps)
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1 cucumber, thinly sliced
  • 1 cup purple cabbage, shredded
  • ¼ cup chopped cilantro
  • Optional: chopped peanuts, lime wedges

Instructions

  1. Season chicken with salt and pepper. Heat sesame oil in a skillet over medium heat and cook chicken for 5–7 minutes until golden and cooked through. Set aside.
  2. In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, lime juice, sriracha, ginger, and garlic. Add warm water gradually until smooth and pourable.
  3. Slice all fresh veggies into thin strips or shreds.
  4. Lay a tortilla flat and spread a spoonful of peanut sauce in the center. Layer chicken, veggies, cilantro, and top with more sauce and chopped peanuts if desired.
  5. Fold in the sides, roll tightly, and slice in half. Serve immediately or wrap for later.
