- ¼ cup creamy peanut butter
- 2 tablespoons soy sauce (low sodium if desired)

- 1 tablespoon rice vinegar
- 1 tablespoon fresh lime juice
- 1 teaspoon sriracha (optional for heat)
- 1 teaspoon grated fresh ginger
- 1 garlic clove, minced
- 2–3 tablespoons warm water (to thin sauce)
- 4 large flour tortillas (or preferred wraps)
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 1 cucumber, thinly sliced
- 1 cup purple cabbage, shredded
- ¼ cup chopped cilantro
- Optional: chopped peanuts, lime wedges
Instructions
- Season chicken with salt and pepper. Heat sesame oil in a skillet over medium heat and cook chicken for 5–7 minutes until golden and cooked through. Set aside.
- In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, lime juice, sriracha, ginger, and garlic. Add warm water gradually until smooth and pourable.
- Slice all fresh veggies into thin strips or shreds.
- Lay a tortilla flat and spread a spoonful of peanut sauce in the center. Layer chicken, veggies, cilantro, and top with more sauce and chopped peanuts if desired.
- Fold in the sides, roll tightly, and slice in half. Serve immediately or wrap for later.
