Description
This Texas Style Chili is a bold, hearty, no-bean classic made with ground beef and a rich mix of spices. It’s the ultimate comfort food for cold nights, game day gatherings, and true chili lovers.
Ingredients
Scale
- 2 pounds ground beef (85% lean)
- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 3 tablespoons tomato paste
- 3 tablespoons chili powder
- 1 tablespoon ground cumin
- 2 teaspoons smoked paprika
- 1 teaspoon dried oregano
- ½ teaspoon cayenne pepper (optional)
- 1 teaspoon salt (plus more to taste)
- ½ teaspoon ground black pepper
- 1 ½ cups beef broth
- 1 teaspoon Worcestershire sauce
- 1 teaspoon apple cider vinegar
Instructions
- Sauté Aromatics: Heat olive oil in a Dutch oven over medium heat. Add onion and cook for 4–5 minutes until translucent. Add garlic and cook for 30 seconds more.
- Brown the Beef: Add ground beef and cook until browned and no longer pink, about 8–10 minutes. Drain excess fat if necessary.
- Spice It Up: Stir in tomato paste, chili powder, cumin, paprika, oregano, cayenne, salt, and pepper. Mix well to coat the beef.
- Add Liquids: Pour in beef broth, Worcestershire sauce, and apple cider vinegar. Stir to combine.
- Simmer: Reduce heat to low, cover, and simmer for 45–60 minutes, stirring occasionally. Uncover and simmer 10–15 minutes more to thicken.
- Taste & Serve: Adjust seasonings as needed and serve hot with desired toppings.
Notes
- No beans: Traditional Texas chili is meat-only. Skip the beans to stay authentic.
- Simmering matters: Let it cook low and slow for the best depth of flavor.
- Spice control: Add more cayenne or jalapeños if you like it hotter.
- Thickening tip: Simmer uncovered or add a spoonful of cornmeal at the end.
- Storage: Store in the fridge up to 5 days or freeze for 3 months.
