  • 1 lb (450 g) smoked sausage or kielbasa, sliced into rounds
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) whole kernel corn, drained
  • 2 cans (14.5 oz each) diced tomatoes with juice
  • 1 can (10 oz) diced tomatoes with green chilies
  • 4 cups beef broth
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil or vegetable oil
  • Fresh cilantro or parsley, for garnish (optional)

Instructions

  1. Brown the Beef: Heat 1 tbsp oil in a large Dutch oven over medium heat. Cook ground beef until browned, drain excess fat, and set aside.
  2. Cook the Sausage: Add 1 tbsp oil to the pot, sauté sausage slices until lightly browned, then set aside with the beef.
  3. Sauté Vegetables: Add onion and garlic to the pot. Cook until softened, about 3 minutes.
  4. Add Potatoes & Spices: Stir in potatoes, chili powder, smoked paprika, cumin, salt, and pepper. Cook for 2–3 minutes.
  5. Combine Ingredients: Return beef and sausage to the pot. Add beans, corn, diced tomatoes, green chilies, and beef broth. Stir well.
  6. Simmer: Bring to a boil, reduce heat to low, cover, and cook for 30–40 minutes until potatoes are tender.
  7. Serve: Ladle into bowls, garnish with cilantro or parsley if desired, and serve with bread or tortillas.

Notes

  • Slow Cooker method: Brown beef and sausage first, then combine all ingredients in the slow cooker. Cook on low 6–8 hours or high 3–4 hours.
  • Tex-Mex twist: Add jalapeños, extra cumin, and fresh cilantro.
  • Soup variation: Add 2 extra cups of beef broth for a thinner, soup-like consistency.
  • Storage: Refrigerate up to 4 days or freeze up to 3 months.
