Ingredients
1 pound ground breakfast sausage 2 tablespoons butter 2 tablespoons all-purpose flour 2 cups milk (whole or 2%) Salt and black pepper, to taste 1/2 teaspoon garlic powder 1 (30-ounce) bag frozen tater tots 2 cups shredded sharp cheddar cheese 6 large eggs 1/4 cup milk (for eggs) 2 green onions, thinly sliced (optional, for garnish)
Instructions
1. Heat a large skillet over medium-high heat and brown the sausage, crumbling it as it cooks. Transfer to a plate, leaving about 2 tablespoons of fat in the skillet. 2. Add butter to the skillet. Once melted, whisk in the flour and cook for 1 minute. Slowly whisk in milk and cook until thickened, about 3–4 minutes. Season with salt, pepper, and garlic powder. Stir the cooked sausage back into the gravy and remove from heat. 3. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish. Spread sausage gravy evenly on the bottom, sprinkle with half of the shredded cheese, then arrange frozen tater tots in a single layer over the top. 4. Bake uncovered for 35–40 minutes, until tater tots are golden and crispy. 5. In a bowl, whisk together eggs, 1/4 cup milk, salt, and pepper. Pour over baked tater tots and sprinkle with remaining cheese. 6. Return to oven and bake another 10–12 minutes, until eggs are set. Cool slightly, garnish with green onions, and serve warm.
