- 2 tbsp lemon juice
- 1 tbsp olive oil
- 2 tsp garam masala
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp turmeric
- 1/2 tsp ground coriander
- 1/2 tsp cayenne pepper (adjust to heat level)
- 2 cloves garlic, minced
- 1 inch ginger, grated
- Salt, to taste

- Lemon wedges, for serving
Instructions
- Prep Cauliflower: Wash and cut cauliflower into florets. Pat dry thoroughly so the marinade adheres well.
- Make Marinade: In a large bowl, whisk together dairy-free yogurt, lemon juice, olive oil, garlic, ginger, and all spices until smooth.
- Coat Cauliflower: Add the florets to the bowl and mix until evenly coated. Marinate for at least 30 minutes or overnight for richer flavor.
- Preheat: Preheat oven to 425°F (220°C) or air fryer to 375°F (190°C).
- Bake or Air Fry: Spread onto a parchment-lined baking sheet and bake 25–30 minutes, flipping halfway, until golden and crispy. Air fry for 15–18 minutes, shaking halfway.
- Serve: Garnish with fresh cilantro and lemon wedges. Serve warm as a main, side, or appetizer.
