  • 1 large head of cauliflower, cut into bite-sized florets (about 800g)
  • 1 cup plain dairy-free yogurt (coconut or almond)
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 2 tsp garam masala
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1/2 tsp ground coriander
  • 1/2 tsp cayenne pepper (adjust to heat level)
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • Salt, to taste
  • Fresh cilantro, for garnish
  • Lemon wedges, for serving

Instructions

  1. Prep Cauliflower: Wash and cut cauliflower into florets. Pat dry thoroughly so the marinade adheres well.
  2. Make Marinade: In a large bowl, whisk together dairy-free yogurt, lemon juice, olive oil, garlic, ginger, and all spices until smooth.
  3. Coat Cauliflower: Add the florets to the bowl and mix until evenly coated. Marinate for at least 30 minutes or overnight for richer flavor.
  4. Preheat: Preheat oven to 425°F (220°C) or air fryer to 375°F (190°C).
  5. Bake or Air Fry: Spread onto a parchment-lined baking sheet and bake 25–30 minutes, flipping halfway, until golden and crispy. Air fry for 15–18 minutes, shaking halfway.
  6. Serve: Garnish with fresh cilantro and lemon wedges. Serve warm as a main, side, or appetizer.
