  • 2 green onions, chopped
  • 2 tablespoons vegetable oil

For the Sauce

  • 3 tablespoons soy sauce
  • 2 tablespoons chili oil or chili paste
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon sugar or honey
  • 1 tablespoon Szechuan peppercorns, crushed (optional)

Optional Protein Add-Ins

  • 1 cup cooked chicken strips
  • ½ cup tofu cubes or shrimp

Instructions

  1. Cook the noodles: Boil noodles until al dente according to package directions. Drain, rinse with cold water, and set aside.
  2. Make the sauce: In a bowl, whisk together soy sauce, chili oil, rice vinegar, sesame oil, garlic, ginger, sugar, and Szechuan peppercorns.
  3. Stir-fry vegetables: Heat vegetable oil in a wok over medium-high heat. Add bell pepper, carrot, and cabbage. Stir-fry for 3–4 minutes until slightly tender but still crisp.
  4. Add protein (optional): Stir in cooked chicken, tofu, or shrimp and heat through.
  5. Combine: Add noodles and pour the sauce over. Toss until evenly coated and heated through.
  6. Serve: Garnish with chopped green onions, sesame seeds, or crushed peanuts. Serve hot with lime wedges if desired.

Notes
