- 8 oz (225g) noodles – ramen, rice noodles, or spaghetti
- 1 red bell pepper, sliced thin
- 1 small carrot, julienned
- ½ cup cabbage, shredded
- 2 green onions, chopped
- 2 tablespoons vegetable oil
For the Sauce
- 3 tablespoons soy sauce
- 2 tablespoons chili oil or chili paste
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 teaspoon sugar or honey
- 1 tablespoon Szechuan peppercorns, crushed (optional)
Optional Protein Add-Ins
- 1 cup cooked chicken strips
- ½ cup tofu cubes or shrimp
Instructions
- Cook the noodles: Boil noodles until al dente according to package directions. Drain, rinse with cold water, and set aside.
- Make the sauce: In a bowl, whisk together soy sauce, chili oil, rice vinegar, sesame oil, garlic, ginger, sugar, and Szechuan peppercorns.
- Stir-fry vegetables: Heat vegetable oil in a wok over medium-high heat. Add bell pepper, carrot, and cabbage. Stir-fry for 3–4 minutes until slightly tender but still crisp.
- Add protein (optional): Stir in cooked chicken, tofu, or shrimp and heat through.
- Combine: Add noodles and pour the sauce over. Toss until evenly coated and heated through.
- Serve: Garnish with chopped green onions, sesame seeds, or crushed peanuts. Serve hot with lime wedges if desired.
Notes
- Use al dente noodles to prevent mushiness when tossed in sauce.
- Adjust the spice by adding more or less chili oil or pepper flakes.
- Add a splash of noodle water if the sauce thickens too much.
- For a vegetarian version, skip the chicken and use tofu or just veggies.
- Serve with spring rolls or dumplings for a complete Asian-inspired meal.
