  • 1 cup dried red lentils, rinsed and drained
  • 2 medium sweet potatoes (about 2 cups mashed, cooked, and peeled)
  • 1/2 cup breadcrumbs (use gluten-free if needed)
  • 1/4 cup finely chopped onion
  • 2 garlic cloves, minced
  • 2 tablespoons fresh parsley or cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground coriander
  • Salt and black pepper, to taste
  • 23 tablespoons olive oil or avocado oil (for pan-frying)

Optional Add-ins

  • 1/4 cup grated carrot or zucchini
  • A pinch of chili flakes
  • 1 tablespoon flaxseed meal

Instructions

  1. Cook Lentils: Place rinsed red lentils in a saucepan with 2 1/2 cups water. Simmer 12–15 minutes until soft, then drain well.
  2. Prepare Sweet Potatoes: Peel, dice, and boil or steam sweet potatoes until tender. Mash until smooth.
  3. Mix Base: In a large bowl, combine mashed sweet potatoes, lentils, breadcrumbs, onion, garlic, herbs, and spices. Stir until well combined.
  4. Shape Patties: Form into 8–10 patties about 1/2-inch thick. If too sticky, add more breadcrumbs.
  5. Cook: Heat oil in a skillet and pan-fry patties 3–4 minutes per side until golden and crispy. Alternatively, bake at 400°F (200°C) for 20 minutes, flipping halfway.
  6. Serve: Enjoy warm in wraps, as burgers, or with dipping sauces.

  • Drain lentils well to avoid mushy patties.
  • Chill mixture for 15 minutes before shaping for firmer patties.
