For the Meatballs:
- 1 lb (450 g) ground pork (or ground chicken/turkey)
- 1 small onion, finely grated
- 1 garlic clove, minced
- ½ cup breadcrumbs
- 1 large egg
- ¼ cup milk
- ½ tsp ground allspice
- ½ tsp ground nutmeg
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp fresh parsley, chopped
For the Soup:
- 2 tbsp butter
- 1 medium onion, diced
- 2 carrots, sliced into thin rounds
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 6 cups chicken or vegetable broth
- 1 cup heavy cream (or half-and-half)
- 2 tbsp flour
- ½ tsp dried thyme
- Salt and black pepper, to taste
- Fresh dill or parsley, for garnish
- Optional: egg noodles, mashed potatoes, or crusty bread
Instructions
- In a large bowl, combine ground pork, onion, garlic, breadcrumbs, egg, milk, and spices. Mix gently until combined. Roll into 1-inch meatballs.
- Heat a skillet over medium heat and brown meatballs on all sides. Remove and set aside.
- In a large pot, melt butter. Sauté onion, carrots, and celery until softened. Add garlic and cook 1 minute.
- Sprinkle flour over vegetables and stir. Slowly pour in broth, whisking to avoid lumps.
- Add thyme, salt, and pepper. Bring to a gentle boil, then reduce heat.
- Add browned meatballs. Simmer 15–20 minutes until cooked through.
- Stir in heavy cream and heat gently (do not boil). Adjust seasoning.
- Ladle into bowls, garnish with dill or parsley, and serve with bread or noodles.
Notes
- For a lighter version, use chicken or turkey instead of pork.
