  • 1 large egg
  • ¼ cup milk
  • ½ tsp ground allspice
  • ½ tsp ground nutmeg
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, chopped

For the Soup:

  • 2 tbsp butter
  • 1 medium onion, diced
  • 2 carrots, sliced into thin rounds
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 6 cups chicken or vegetable broth
  • 1 cup heavy cream (or half-and-half)
  • 2 tbsp flour
  • ½ tsp dried thyme
  • Salt and black pepper, to taste
  • Fresh dill or parsley, for garnish
  • Optional: egg noodles, mashed potatoes, or crusty bread

Instructions

  1. In a large bowl, combine ground pork, onion, garlic, breadcrumbs, egg, milk, and spices. Mix gently until combined. Roll into 1-inch meatballs.
  2. Heat a skillet over medium heat and brown meatballs on all sides. Remove and set aside.
  3. In a large pot, melt butter. Sauté onion, carrots, and celery until softened. Add garlic and cook 1 minute.
  4. Sprinkle flour over vegetables and stir. Slowly pour in broth, whisking to avoid lumps.
  5. Add thyme, salt, and pepper. Bring to a gentle boil, then reduce heat.
  6. Add browned meatballs. Simmer 15–20 minutes until cooked through.
  7. Stir in heavy cream and heat gently (do not boil). Adjust seasoning.
  8. Ladle into bowls, garnish with dill or parsley, and serve with bread or noodles.

  • For a lighter version, use chicken or turkey instead of pork.
