Ingredients
- 4 slices sourdough or hearty sandwich bread
- 4 slices of cooked bacon (crispy but not too brittle)
- 1/4 cup prepared basil pesto (store-bought or homemade)
- 1/4 cup chopped sun-dried tomatoes (oil-packed, drained and patted dry)
- 4 slices mozzarella cheese or provolone
- 2 tablespoons butter (softened, for spreading)
- Optional: parmesan cheese for sprinkling on the outside of the bread for extra crunch
Instructions
Step 1: Prep the Ingredients
Cook your bacon until crispy and drain on paper towels. Drain and chop the sun-dried tomatoes. Have your pesto and cheese ready.
Step 2: Assemble the Sandwich
Lay the bread slices flat. Spread one side of each with butter. On the unbuttered side of two slices, spread pesto, layer with cheese, sun-dried tomatoes, and bacon. Top with the remaining slices, buttered side out.
Step 3: Grill to Perfection
Heat a skillet over medium heat. Place the sandwiches buttered-side down in the pan. Cook for 3–4 minutes until golden and crispy. Flip carefully and cook another 2–3 minutes until the cheese is melted and both sides are browned.
Step 4: Serve and Enjoy
Let rest for a minute, then slice and serve immediately. The result: a golden, crunchy, cheesy sandwich packed with flavor.
