- 1½ cups (180g) whole wheat pastry flour
- 1½ tsp ground cinnamon
- 1 tsp baking soda
- ½ tsp baking powder
- ¼ tsp fine sea salt
- Optional: ½ cup chopped walnuts or sugar-free chocolate chips
Instructions
- Preheat Oven: Preheat to 325°F (165°C). Grease or line a 9×5-inch loaf pan with parchment paper.
- Mash Bananas: In a large bowl, mash bananas until smooth (a few small lumps are fine).
- Mix Wet Ingredients: Whisk in eggs, oil, milk, and vanilla until smooth and creamy.
- Combine Dry Ingredients: In a separate bowl, whisk flour, cinnamon, baking soda, baking powder, and salt.
- Mix Batter: Gently fold dry ingredients into wet mixture until just combined—do not overmix.
- Add Mix-Ins: Stir in walnuts or chocolate chips if using.
- Bake: Pour batter into prepared pan. Bake 50–60 minutes, or until a toothpick inserted comes out mostly clean.
- Cool: Let bread cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
