Instructions
- Brown the ground meat: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground meat and cook until browned, breaking it apart with a wooden spoon. Drain any excess fat if needed.
- Sauté the vegetables: Add the onion, bell pepper, and garlic to the pot with the browned meat. Sauté for 3–4 minutes, or until the vegetables are softened and fragrant.
- Add the liquids and seasonings: Stir in the diced tomatoes, tomato sauce, and beef or chicken broth. Add the oregano, basil, salt, black pepper, and red pepper flakes (if using). Bring the soup to a simmer.
- Cook the rice: Stir in the uncooked rice and cover the pot. Allow the soup to simmer for 20–25 minutes, or until the rice is fully cooked and the flavors have melded together. Stir occasionally to make sure the rice doesn’t stick to the bottom of the pot.
- Taste and adjust: Taste the soup and adjust the seasonings as needed, adding more salt, pepper, or herbs to suit your preferences.
