This Stuffed Pepper Soup brings all the savory flavors of classic stuffed peppers into a hearty, one-pot soup. Made with tender bell peppers, ground meat, rice, and a rich tomato broth, it’s an easy, comforting family meal perfect for weeknights, meal prep, or cozy weekends.
Ingredients
Scale
- 1 lb ground beef or ground turkey
- 3 bell peppers (green is classic, but red/yellow/orange add sweetness), chopped
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) tomato sauce or crushed tomatoes
- 4 cups beef, chicken, or vegetable broth
- 1 cup cooked rice (white or brown)
- 1 tsp Italian seasoning
- 1 tsp paprika
- Salt and pepper to taste
- Optional garnish: fresh parsley, shredded cheese, or sour cream
Instructions
- In a large pot or Dutch oven, brown the ground beef or turkey until fully cooked. Drain excess fat.
- Add chopped onion, garlic, and bell peppers. Sauté until softened.
- Stir in diced tomatoes, tomato sauce, and broth. Add Italian seasoning, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 30 minutes to develop flavors.
- Stir in cooked rice just before serving to keep it from getting mushy.
- Taste and adjust seasonings as desired. Serve hot, garnished with parsley, cheese, or sour cream.
Notes
- Use a mix of pepper colors for a sweeter, more complex flavor.
- For a low-carb version, replace rice with cauliflower rice.
- Make vegetarian by replacing meat with lentils or beans.
- This soup freezes best without rice—add it when reheating.
- Perfect for Crockpot or Instant Pot adaptations.
