When the weather heats up, nothing beats a cool, fruity dessert like this easy Strawberry Sorbet.

- 4 cups fresh or frozen strawberries, hulled
 - ⅓ to ½ cup maple syrup or honey (adjust to taste)
 - 2 tablespoons lemon juice (freshly squeezed)
 - ½ cup water
 - Optional: 1 teaspoon vanilla extract for extra flavor
 
Instructions
- Blend ingredients: In a blender or food processor, combine strawberries, maple syrup, lemon juice, water, and vanilla extract (if using). Blend until smooth and creamy.
 - Taste and adjust: Taste the mixture and add more sweetener or lemon juice if desired. Blend again briefly to combine.
 - Freeze: Pour the mixture into a freezer-safe container or silicone molds. Freeze for at least 4 hours, until firm.
 - Serve: For soft serve, let sorbet sit at room temperature for 5 minutes before scooping. Enjoy as is or with fresh berries and mint.
 
Notes
Use ripe, sweet strawberries for the best natural flavor. Adjust the sweetener to your preference; less if strawberries are very ripe. Adding lemon juice brightens the flavor and balances sweetness. Blend on high speed for a creamy texture. If sorbet freezes too hard, let it thaw slightly before serving.
