Instructions
Step 1: Make the Shortbread Crust
- In a bowl, mix shortbread cookie crumbs, melted butter, and sugar.
- Press the mixture into a 9-inch pie dish, spreading evenly.
- Freeze for 15 minutes while you prepare the filling.
Step 2: Prepare the Strawberry Filling
- In a bowl, mix chopped strawberries and powdered sugar. Let sit for 5 minutes to release juices.
- In a separate bowl, beat cream cheese and vanilla extract until smooth.
- In another bowl, whip heavy cream until soft peaks form.
- Fold the whipped cream and strawberry mixture into the cream cheese until fully combined.
Step 3: Assemble & Freeze the Pie
- Pour the strawberry filling over the chilled crust.
- Spread evenly and freeze for at least 4 hours (or overnight for best results).
Step 4: Add Toppings & Serve
- Before serving, spread whipped topping over the frozen pie.
- Garnish with crushed shortbread cookies and fresh strawberry slices.
- Let sit at room temperature for 5-10 minutes before slicing.
