  • Author: Lyndy

  • Yield: 16 bars 1x

Description

Strawberry Pop Tart Cookie Bars are the ultimate mashup of two childhood favorites — buttery cookie layers, jammy strawberry filling, and a pretty pink glaze. These bars capture all the nostalgia of Pop Tarts with the chewy richness of dessert bars. Perfect for weekend baking, parties, or gifting, they’re a colorful, crowd-pleasing treat that’s as fun to make as it is to eat.

Ingredients

Scale

For the Cookie Base and Top Layer:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 ¾ cups (345g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt

For the Strawberry Filling:

  • ¾ cup strawberry jam or preserves
  • 1 tablespoon cornstarch (optional, for thickening)

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk or cream
  • ½ teaspoon vanilla extract
  • A few drops of pink or red food coloring
  • Sprinkles (optional)

Instructions

  1. Preheat and Prep: Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper for easy removal.
  2. Cream Butter and Sugars: In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy, about 2–3 minutes.
  3. Add Eggs and Vanilla: Mix in eggs one at a time, followed by vanilla extract.
  4. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to wet ingredients until a soft dough forms.
  5. Layer the Dough: Press half the dough into the bottom of the prepared pan. Spread the strawberry jam evenly over it, leaving a small border.
  6. Add the Top Layer: Drop spoonfuls of the remaining dough over the jam and gently spread or pat it down.
  7. Bake: Bake for 25–30 minutes or until lightly golden. Allow to cool completely before glazing.
  8. Glaze and Decorate: Whisk powdered sugar, milk, and vanilla together until smooth. Tint with food coloring, drizzle or spread over bars, and top with sprinkles.
  9. Slice and Serve: Once glaze is set, cut into squares or rectangles and enjoy your nostalgic dessert bars.

Notes

  • Don’t overmix the dough — it keeps the bars soft and tender.
  • Use parchment paper for clean removal and slicing.
  • Cool completely before glazing to prevent melting.
  • Try other jams like raspberry or blueberry for fun variations.
  • Store at room temperature for 3 days or refrigerate up to a week.
