Ingredients

2 cups rolled oats
1 cup oat flour (or grind oats into flour using a blender)
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup maple syrup or agave
1/4 cup coconut oil or any neutral oil
1 teaspoon vanilla extract
1 1/2 cups diced strawberries (fresh or frozen)
12 tablespoons chia seeds or cornstarch (to thicken the filling, optional)
Optional: 2 tablespoons coconut sugar or brown sugar for extra topping crunch


Instructions

Step 1: Preheat & Prep
Preheat your oven to 350°F (175°C). Line an 8×8-inch square baking dish with parchment paper or lightly grease it.

Step 2: Make the Oat Base
In a large bowl, combine the rolled oats, oat flour, salt, and baking soda. Add in the maple syrup, oil, and vanilla extract. Mix until a thick dough forms. Reserve about 3/4 cup of this mixture for the topping.

Step 3: Press the Base Layer
Firmly press the remaining dough into the bottom of your prepared baking dish to form a solid crust layer.

Step 4: Prepare the Strawberry Filling
In a separate bowl, toss your diced strawberries with chia seeds or cornstarch. This helps thicken the filling as it bakes and keeps the bars from becoming soggy.

Step 5: Assemble
Evenly spread the strawberry mixture over the pressed oat layer. Sprinkle the reserved 3/4 cup oat mixture on top as the crumb topping.

Step 6: Bake
Bake for 30–35 minutes or until the top is golden and the strawberries are bubbling slightly.

Step 7: Cool & Slice
Let the bars cool completely before slicing. This allows them to firm up and hold their shape when cut.

Notes

  • Use rolled oats for the best chewy texture. Quick oats will work but yield a softer bar.
  • Press the base layer firmly to prevent crumbling.
  • Let the bars cool completely before slicing for clean, even squares.
  • If using frozen strawberries, thaw them first and pat dry to prevent excess moisture.
