Description
There’s something irresistible about pulling apart a warm, gooey piece of monkey bread, especially when it’s infused with fresh strawberries and a rich cream cheese glaze.
Ingredients
For the Monkey Bread Base:
- 2 cans refrigerated biscuit dough (16.3 oz each)
- 1 cup fresh strawberries, diced
- ¾ cup granulated sugar
- 1 teaspoon cinnamon (optional)
- ½ cup unsalted butter, melted
For the Strawberry Cream Cheese Glaze:
- 4 oz cream cheese, softened
- 1 tablespoon strawberry puree or finely mashed strawberries
- ½ cup powdered sugar
- ½ teaspoon vanilla extract
- 2–3 tablespoons milk or cream, to thin
Instructions
1. Preheat & Prepare the Pan
Preheat your oven to 350°F (175°C). Grease a bundt pan generously with butter or non-stick spray.
2. Cut and Coat the Biscuit Dough
Cut each biscuit into quarters. In a large bowl or zip-top bag, combine the granulated sugar (and cinnamon, if using) and toss the dough pieces to coat evenly.
3. Layer with Strawberries
Place half of the sugared dough into the bundt pan. Sprinkle half of the diced strawberries evenly over the top. Repeat with remaining dough and strawberries.
4. Pour the Butter
Drizzle the melted butter evenly over the entire mixture.
5. Bake
Bake for 35–40 minutes, or until the top is golden brown and the dough is cooked through. If the top browns too quickly, cover loosely with foil during the last 10 minutes.
6. Cool and Invert
Let cool in the pan for 10 minutes, then carefully invert onto a serving plate.
7. Make the Glaze
In a mixing bowl, beat cream cheese, strawberry puree, powdered sugar, vanilla, and milk until smooth and pourable.
8. Glaze and Serve
Drizzle the glaze generously over the warm monkey bread and serve immediately.
Notes
To Store:
Keep leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
To Reheat:
Warm individual servings in the microwave for 20–30 seconds. Whole monkey bread can be reheated in a 300°F oven for about 10 minutes.
To Make Ahead:
Assemble in the bundt pan (without baking), cover tightly, and refrigerate overnight. Bake fresh in the morning for best results.
