Description

This Strawberry Earthquake Cake is a show-stopping, gooey dessert bursting with strawberry flavor, swirls of cream cheese, and moist cake texture. Made with simple pantry ingredients and ready in under an hour, it’s the perfect easy dessert for birthdays, anniversaries, or any celebration. Sweet, creamy, and irresistibly rich — it’s a guaranteed crowd-pleaser!

Ingredients

Scale

For the Cake

  • 1 box strawberry cake mix
  • 1 cup sweetened shredded coconut (optional)
  • ½ cup chopped pecans or walnuts (optional)
  • 1 stick (½ cup) unsalted butter, melted
  • 1 cup crushed or sliced strawberries (fresh or thawed)
  • 2 large eggs

For the Cream Cheese Layer

  • 8 oz (1 package) cream cheese, softened
  • 2 cups powdered sugar
  • ½ cup (1 stick) melted butter
  • 1 teaspoon vanilla extract

Optional Toppings

  • Whipped cream
  • Fresh strawberry slices
  • White chocolate drizzle

Instructions

  1. Preheat the Oven: Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Prepare the Cake Layer: In a large bowl, mix strawberry cake mix, eggs, melted butter, and crushed strawberries until smooth. Fold in coconut or nuts if desired. Spread evenly in the prepared pan.
  3. Make the Cream Cheese Mixture: In another bowl, beat softened cream cheese, melted butter, powdered sugar, and vanilla until smooth and creamy.
  4. Layer and Swirl: Drop spoonfuls of the cream cheese mixture over the cake batter. Swirl gently with a knife to create a marbled “earthquake” pattern.
  5. Bake: Bake for 40–45 minutes until the edges are golden and the center is just set. The middle should remain slightly gooey.
  6. Cool and Serve: Let cool for at least 20 minutes before slicing. Top with whipped cream, strawberries, or white chocolate drizzle.

Notes

  • Don’t overmix the batter — gentle swirling gives the best marbled look.
  • Undercook slightly for extra gooey texture.
  • Let cool before cutting for clean slices.
  • Use thawed frozen strawberries if fresh aren’t available.
  • Add mini white chocolate chips for extra sweetness.
  • Store in the fridge up to 5 days or freeze up to 3 months.
