Ingredients
Scale
For the Cake
- 1 box strawberry cake mix
- 1 cup sweetened shredded coconut (optional)
- ½ cup chopped pecans or walnuts (optional)
- 1 stick (½ cup) unsalted butter, melted
- 1 cup crushed or sliced strawberries (fresh or thawed)
- 2 large eggs
For the Cream Cheese Layer
- 8 oz (1 package) cream cheese, softened
- 2 cups powdered sugar
- ½ cup (1 stick) melted butter
- 1 teaspoon vanilla extract
Optional Toppings
- Whipped cream
- Fresh strawberry slices
- White chocolate drizzle
Instructions
- Preheat the Oven: Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Prepare the Cake Layer: In a large bowl, mix strawberry cake mix, eggs, melted butter, and crushed strawberries until smooth. Fold in coconut or nuts if desired. Spread evenly in the prepared pan.
- Make the Cream Cheese Mixture: In another bowl, beat softened cream cheese, melted butter, powdered sugar, and vanilla until smooth and creamy.
- Layer and Swirl: Drop spoonfuls of the cream cheese mixture over the cake batter. Swirl gently with a knife to create a marbled “earthquake” pattern.
- Bake: Bake for 40–45 minutes until the edges are golden and the center is just set. The middle should remain slightly gooey.
- Cool and Serve: Let cool for at least 20 minutes before slicing. Top with whipped cream, strawberries, or white chocolate drizzle.
Notes
- Don’t overmix the batter — gentle swirling gives the best marbled look.
- Undercook slightly for extra gooey texture.
- Let cool before cutting for clean slices.
- Use thawed frozen strawberries if fresh aren’t available.
- Add mini white chocolate chips for extra sweetness.
- Store in the fridge up to 5 days or freeze up to 3 months.
