- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (25g) crushed freeze-dried strawberries
For the Strawberry Crunch Topping:
- 1 cup (20g) freeze-dried strawberries
- 15 vanilla sandwich cookies (crushed)
- 2 tablespoons melted butter
Optional Glaze:
- 1/2 cup (60g) powdered sugar
- 1 tablespoon milk or cream
- 1/4 teaspoon vanilla extract
Instructions
- Preheat the oven: Set oven to 350°F (175°C) and line baking sheets with parchment paper.
- Make the cookie dough: Beat butter, granulated sugar, and brown sugar until light and fluffy (2–3 minutes). Add eggs one at a time, then vanilla extract.
- Combine dry ingredients: In a separate bowl, whisk flour, baking powder, baking soda, and salt. Gradually add to wet ingredients until a soft dough forms. Fold in crushed freeze-dried strawberries.
- Shape and bake: Scoop tablespoons of dough onto baking sheets, spacing 2 inches apart. Bake for 10–12 minutes, until edges are golden and centers soft. Let cool completely.
- Prepare the strawberry crunch: In a food processor, pulse freeze-dried strawberries and vanilla sandwich cookies. Add melted butter and pulse again until crumbly.
- Make the glaze: Whisk powdered sugar, milk, and vanilla extract together until smooth. Drizzle over cooled cookies.
- Finish: Sprinkle with strawberry crunch while glaze is wet. Let set before serving.
