  • ½ cup (120g) Greek yogurt (plain or vanilla)
  • 1 tablespoon cream cheese, softened
  • 1 tablespoon maple syrup or honey (adjust to taste)
  • ½ teaspoon vanilla extract
  • ½ teaspoon lemon zest (optional, for cheesecake flavor)
  • ½ cup (75g) diced fresh strawberries
  • 1 tablespoon chia seeds (for extra fiber and thickness)
  • 1 tablespoon crushed graham crackers (for a cheesecake crunch, optional)

Instructions

Step 1: Mix the Base

  1. In a bowl, combine old-fashioned oats, milk, Greek yogurt, cream cheese, maple syrup, vanilla extract, and lemon zest. Stir well.

Step 2: Add Chia Seeds & Strawberries

  1. Stir in chia seeds for extra thickness.
  2. Fold in diced strawberries, mixing gently.

Step 3: Transfer & Refrigerate

  1. Divide the mixture into mason jars or airtight containers.
  2. Cover and refrigerate overnight (or at least 4 hours) to let the oats soften.

Step 4: Serve & Enjoy

  1. Stir the oats before eating.
  2. Top with extra strawberries, crushed graham crackers, or a drizzle of honey for a cheesecake-like experience.

Notes

  • Use old-fashioned oats – They absorb the liquid better than quick oats, creating a creamy texture.
  • Let it sit overnight – At least 4-6 hours ensures the best consistency.
  • For extra protein – Add a scoop of vanilla protein powder or more Greek yogurt.
  • Adjust the sweetness – Taste and add more honey/maple syrup if needed.
