If you’re looking for tasty vegetarian recipes that are packed with flavor and texture, this sticky sesame cauliflower is a must-try!

Ingredients

Scale

For the Crispy Cauliflower:

  • 1 medium head cauliflower, cut into bite-sized florets
  • ¾ cup (90g) all-purpose flour (or chickpea flour for gluten-free)
  • ¾ cup (180ml) water
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon sesame seeds (for garnish)

For the Sticky Sesame Sauce:

  • ¼ cup (60ml) soy sauce (or tamari for gluten-free)
  • 2 tablespoons maple syrup (or honey for non-vegan)
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Instructions

Step 1: Preheat the Oven

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2: Prepare the Cauliflower Batter

In a bowl, whisk together the flour, water, salt, black pepper, and garlic powder until smooth.

Step 3: Coat and Bake the Cauliflower

Dip each cauliflower floret into the batter, ensuring it’s fully coated. Place them on the prepared baking sheet, leaving space between each piece. Bake for 20-25 minutes, flipping halfway through, until crispy and golden.

Step 4: Make the Sticky Sesame Sauce

While the cauliflower bakes, heat a saucepan over medium heat. Add soy sauce, maple syrup, rice vinegar, sesame oil, ginger, and garlic. Stir well and bring to a simmer.

Step 5: Thicken the Sauce

Add the cornstarch-water mixture, stirring constantly until the sauce thickens (about 2 minutes). Remove from heat.

Step 6: Coat the Cauliflower

Once the cauliflower is crispy, toss it in the sticky sesame sauce until evenly coated.

Step 7: Garnish & Serve

Sprinkle with sesame seeds and serve hot over steamed rice, quinoa, or noodles.

Notes

  • Make it extra crispy – Use panko breadcrumbs after dipping in batter for extra crunch.
  • Don’t overcrowd the pan – Bake in a single layer to ensure even crispiness.
  • Serve immediately – The cauliflower stays crisp best when served fresh.
