Ingredients
1 ½ pounds (680 g) boneless, skinless chicken thighs (or breasts) Salt and pepper to taste 2 tablespoons vegetable oil 3 cloves garlic, minced 1 tablespoon ginger, grated 3 tablespoons gochujang (Korean chili paste) 2 tablespoons soy sauce 3 tablespoons honey 2 tablespoons rice vinegar 2 tablespoons water 1 teaspoon sesame oil 1 tablespoon sesame seeds, for garnish 2 green onions, thinly sliced, for garnish
Instructions
1. Season chicken thighs lightly with salt and pepper. 2. In a small bowl, whisk together gochujang, soy sauce, honey, rice vinegar, water, sesame oil, garlic, and ginger to make the sauce. Reserve 2 tablespoons of sauce for brushing at the end. 3. Heat vegetable oil in a large skillet over medium-high heat. Sear chicken for 3–4 minutes on each side until golden. 4. Reduce heat slightly and pour in the sauce (except reserved portion). Simmer 5–7 minutes, turning chicken to coat and cook through. 5. Brush chicken with reserved sauce just before removing from heat for extra shine. 6. Garnish with sesame seeds and green onions. Serve hot with rice, noodles, or vegetables.
Notes
• Use chicken thighs for juiciness, but breasts work too with reduced cook time. • Adjust gochujang amount to your preferred spice level. • Add a splash of water if glaze thickens too much while cooking. • Rest chicken a few minutes before slicing for best results.
