- 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
- 1 tablespoon sesame oil

Instructions
- Prep & Roast: Preheat oven to 400°F (200°C). Dice eggplant, toss with olive oil, salt, and pepper. Spread on a baking sheet and roast 20–25 minutes, flipping halfway, until golden and tender.
- Make Sauce: Heat sesame oil in a small saucepan. Add garlic and ginger, sauté 1 minute. Stir in soy sauce, vinegar, and honey. Whisk in cornstarch slurry and cook until thick and glossy.
- Combine: Place roasted eggplant in a bowl. Pour sauce over and toss gently to coat.
- Garnish & Serve: Top with green onions, sesame seeds, or fresh cilantro. Serve hot over rice or noodles.
