- 1 lb steak (sirloin, strip, or leftover cooked steak)
- 2 tablespoons olive oil or avocado oil
- 2 cups potatoes, diced (russet or Yukon gold)
- 1/2 yellow onion, chopped
- 1 bell pepper, diced
- 2–4 large eggs
- Salt and black pepper, to taste
- Optional spices: paprika, garlic powder, red chili flakes
- Optional toppings: parsley, avocado, shredded cheese, hot sauce
Instructions
- Cook the Potatoes: Heat 1 tbsp oil in a skillet. Add diced potatoes, season, and cook 10–12 minutes until golden and crisp. Remove and set aside.
- Sear the Steak: Season steak with salt and pepper. Add to skillet with oil and sear 3–4 minutes per side for medium rare. Rest 5 minutes, then slice or cube.
- Sauté Veggies: In the same skillet, cook onion and bell pepper 3–4 minutes until soft.
- Combine: Return potatoes and steak to the pan. Stir gently and make wells for eggs.
- Add Eggs: Crack 2–4 eggs into wells. Cover and cook 3–5 minutes until whites are set and yolks runny.
- Serve: Top with herbs, avocado, cheese, or hot sauce. Enjoy immediately.

- Use a cast iron skillet for the crispiest potatoes.
- Don’t overcrowd the pan—cook in batches if needed.
