Ingredients
Scale
- 20 small white button mushrooms, stems removed
- 4 oz cream cheese, softened
- 1/2 cup shredded mozzarella or Parmesan cheese
- 1 garlic clove, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup marinara or pizza sauce
- 10 pitted black olives, sliced into rounds
- 1–2 tablespoons chopped parsley or basil (optional garnish)
- Olive oil spray (for baking)
Instructions
- Prep mushrooms: Clean mushrooms and remove stems. Arrange caps on a parchment-lined baking sheet and lightly spray with olive oil.
- Make filling: In a bowl, mix softened cream cheese, mozzarella/Parmesan, garlic, salt, and pepper until smooth.
- Stuff: Spoon or pipe cheese mixture into mushroom caps, forming small domes.
- Decorate: Top each with a black olive slice. Add a small dot of marinara inside the olive to resemble the iris/pupil.
- Bake: Bake at 375°F (190°C) for 15–18 minutes, until mushrooms are tender and filling heated through.
- Serve: Garnish with parsley or basil and enjoy warm or at room temperature.
Notes
- For smaller “eyeballs,” choose bite-sized mushrooms.
- Pipe filling for a cleaner look and more height.
- Use green olives for a creepy “zombie eye” effect.
- For bloody vibes, swirl beet juice into the cheese filling.
- Best served fresh—mushrooms can release water if stored too long.
