Ingredients
Scale
-
- For the Chicken:
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
-
- For the Spinach Filling:
- 1 cup chopped spinach (fresh or thawed frozen, squeezed dry)
- 4 ounces cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- Optional Add-ins:
- Crumbled feta or goat cheese
- Red pepper flakes
- Chopped sun-dried tomatoes or artichokes
Instructions
- Make the Filling: In a bowl, combine chopped spinach, softened cream cheese, mozzarella, Parmesan, and minced garlic. Mix until smooth and creamy.
- Prepare the Chicken: Using a sharp knife, carefully butterfly each chicken breast to create a pocket—do not cut all the way through.
- Season: Rub the outside of the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Stuff: Evenly divide the spinach mixture among the chicken breasts and fill each pocket. Secure with toothpicks if needed.
- Sear: Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken for 2–3 minutes per side until lightly browned.
- Bake: Transfer skillet to a 375°F (190°C) oven and bake for 20–25 minutes, or until internal temperature reaches 165°F.
- Rest & Serve: Let chicken rest 5 minutes before slicing. Serve warm.
Notes
- Use full-fat cream cheese for the creamiest filling.
- Warm cream cheese mixes more smoothly—avoid using it cold.
- Secure chicken with toothpicks to prevent filling leakage.
- Let the chicken rest before cutting to preserve juices.
- Frozen spinach works—just thaw and squeeze out excess liquid.
