    • 1/2 cup shredded mozzarella cheese
    • 1/4 cup grated Parmesan cheese
    • 1 clove garlic, minced

  • Chopped sun-dried tomatoes or artichokes

Instructions

  1. Make the Filling: In a bowl, combine chopped spinach, softened cream cheese, mozzarella, Parmesan, and minced garlic. Mix until smooth and creamy.
  2. Prepare the Chicken: Using a sharp knife, carefully butterfly each chicken breast to create a pocket—do not cut all the way through.
  3. Season: Rub the outside of the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  4. Stuff: Evenly divide the spinach mixture among the chicken breasts and fill each pocket. Secure with toothpicks if needed.
  5. Sear: Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken for 2–3 minutes per side until lightly browned.
  6. Bake: Transfer skillet to a 375°F (190°C) oven and bake for 20–25 minutes, or until internal temperature reaches 165°F.
  7. Rest & Serve: Let chicken rest 5 minutes before slicing. Serve warm.
