- 2 large eggs
- 1 cup shredded Parmesan cheese
- 1 cup shredded mozzarella or cheddar
- 1/2 cup sour cream or Greek yogurt
- 1/2 cup milk
- 2 tablespoons butter, melted
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- Optional topping: crushed crackers or breadcrumbs for a golden crust
Instructions
- Preheat and prep: Set oven to 375°F (190°C). Grease a medium baking dish with butter or spray.
- Cook the spinach: Sauté fresh spinach in a skillet until wilted, then drain and squeeze dry. If using frozen, thaw and squeeze dry well.
- Mix the filling: In a bowl, whisk together eggs, sour cream, milk, garlic powder, onion powder, salt, and pepper. Stir in half the Parmesan and all the mozzarella.
- Combine and assemble: Mix spinach into the creamy mixture. Spread into the prepared baking dish and top with remaining Parmesan and optional breadcrumbs.
- Bake: Bake uncovered for 25–30 minutes until golden and bubbly. Let rest for 5 minutes before serving.
