Description

This Spinach Feta Bake is a simple yet satisfying dish that combines fresh spinach, creamy feta cheese, and eggs to create a fluffy, savory pie. Perfect for breakfast, lunch, or dinner, this crustless spinach pie is healthy, low-carb, and packed with flavor. It’s quick to make and can be enjoyed warm, at room temperature, or cold, making it an ideal dish for meal prep and leftovers.

Ingredients

Scale
  • 4 cups fresh spinach, chopped (or 1 package of frozen spinach, thawed and drained)
  • 1 cup crumbled feta cheese
  • 6 large eggs
  • 1/4 cup milk (dairy or non-dairy)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil for greasing the baking dish
  • Optional: Fresh herbs (like basil or oregano) for extra flavor
  • Optional: A pinch of nutmeg to enhance the spinach flavor
  • Optional: 1/4 cup of parmesan cheese for an extra cheesy topping

Instructions

  1. Preheat the Oven and Prepare the Baking Dish: Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish with olive oil or cooking spray.
  2. Sauté the Spinach (if using fresh): If using fresh spinach, heat a small pan over medium heat with a little olive oil. Add the chopped spinach and sauté until wilted (about 3-4 minutes). Set aside to cool slightly.
  3. Prepare the Egg Mixture: In a large bowl, whisk the eggs and milk together. Add the garlic powder, onion powder, salt, and pepper. Whisk until well combined.
  4. Combine Spinach and Feta: Add the sautéed spinach (or thawed frozen spinach) and crumbled feta cheese to the egg mixture. Stir to combine evenly.
  5. Pour into the Baking Dish: Pour the mixture into the prepared baking dish. Spread it out evenly with a spatula. If you like, sprinkle a little extra parmesan on top for a cheesy golden finish.
  6. Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the eggs are set and lightly golden on top. Check doneness with a toothpick — it should come out clean.
  7. Serve: Let the dish cool for a few minutes before slicing and serving.

Notes

  • If you’re using frozen spinach, make sure to thaw and drain it thoroughly to remove excess moisture.
  • For added flavor, you can mix in some sautéed mushrooms, tomatoes, or bell peppers.
  • If you prefer a dairy-free version, simply substitute feta with vegan cheese and use almond milk or oat milk.
  • This spinach feta bake can be served warm, at room temperature, or cold, making it a perfect dish for meal prep.
